My new life in California is so different than my routine in New York. Since my recent move to LA LA Land, I have enjoyed taking advantage of the warm weather, radiant sunshine, sandy beaches, and the unfortunate traffic. Driving from place to place, instead of walking has seriously cut into my once active lifestyle. As a result, my step counter has been pinging me non-stop to exercise more. So I had to do something about it.
Pan Seared Alaskan Salmon with Lemon, Dill & Capers
One of the first things I learned from my husband is that the best salmon comes from Alaska. I've listened to numerous stories about of his days as a commercial salmon fisherman and dipnetting experiences back in Anchorage. Getting fresh Alaskan Salmon in the "lower 48" does come at a cost, but it is totally worth it. I found this beautiful piece of fish at Whole Foods to make pan seared Alaskan salmon with fresh dill, lemon, and capers.
Thai Shrimp Curry
Easy to Make Thai Shrimp Curry Recipe
Thai Shrimp Curry Recipe It wasn't until my recent trip to Thailand that I gained a genuine appreciation for Thai cuisine. Don't use your run of the mill Pad Thai as a gauge, because let me tell you, it's not an accurate measure of how delicious Thai food can be. The flavors in Thai cooking are very distinctive, and the ingredients typically have many fresh elements. I know the thought of making Thai Shrimp Curry at home can be intimidating (especially with the ingredient list below), but don't fret! This recipe is simple to make, your kitchen may turn into your favorite Thai Restaurant!
Butterflied trout
Whole Roasted Lemon & Garlic Stuffed Rainbow Trout
Butterflied troutFresh roasted fish always transports me to the Mediterranean coast. There is something about this simple preparation that really allows the fish be the star of the dish. Trout is a mild white fish with a light, clean flavor and just a touch of sweetness, perfect for anyone who is not a fish lover. For this recipe, I simply used garlic, parsley and lemon to accent this fish's natural flavor.
mussels
Mussels & Spicy Turkey Sausage with Garlic Butter Sauce
musselsWhether you love or hate mussels, it's hard to resist spicy sausage in a finger licking white wine and garlic butter sauce! Mussels are a seafood that I actually grew to enjoy. The chewy texture wasn't initially appealing to me, until I realized I'd only been presented with overcooked  versions of this tasty underwater treat . When cooked properly, these little morsels of seafood goodness are perfect as an appetizer or can be deliciously tossed with your favorite seafood pasta. I added turkey sausage to this dish to make it more filling, and the flavors of fennel and spice gave it the extra kick I craved. The broth of a mussel dish can be the best part, so don't forget a loaf of crusty bread to soak it all up when serving.
