Goat Cheese Crostinis

One of my favorite appetizers are Crostinis, which is just a fancy way of saying a small piece of toasted or grilled bread with toppings. I feel like they look really impressive without taking a whole lot of effort to make. I seem to always reach for the Goat cheese as a base for Crostinis. Here is one savory & sweet recipe that I just love:

Fig & Prosciutto Goat Cheese Crostini

This dish would make an amazing appetizer and is great for entertaining!

Ingredients

Prep time: 5 Mins

Cook time: 5 mins

  • 1 French Baguette or 1 Loaf Pumpernickel Bread
  • 10 ozΒ  Goat Cheese
  • Β½ lb Prosciutto thinly sliced
  • 1 lb Fresh Figs or 1 Jar Fig Preserves if Figs are not in season
  • Watercress leaves for Garnish

Directions

  1. Pre-heat broiler to high
  2. Thinly slice bread and place on baking sheet to toast on both sides
  3. Let bread cool slightly before spreading goat cheese onto each piece
  4. Top with Prosciutto
  5. Quarter Figs and place on top
  6. Garnish with watercress

Balsamic Peach Crostini with Goat Cheese and Basil

This dish will satisfy the sweet tooth and can easily be served as dessert after an elegant meal.

Ingredients

Prep time: 10 Minutes

Cook time: 10 Minutes

  • 1 French Baguette
  • 2 Peaches
  • 10 oz Goat Cheese
  • 10 Basil Leaves
  • 1 cup Balsamic Vinegar

Directions

  1. Pre-heat broiler to high
  2. Thinly slice bread and place on baking sheet to toast on both sides
  3. Let bread cool slightly before spreading goat cheese onto each piece
  4. Slice peaches and place 2 pieces on top
  5. Heat balsamic vinegar in small sauce pan and bring to a gentle boil, let it reduce to about half.
  6. Using a small spoon, lightly drizzle the balsamic reduction onto the crostinis
  7. Chiffonade (cut into thin strips) the basil by placing the basil leaves on top of each other and roll them into a cylinder shape. Then cut into very small slices, creatingΒ strips for your garnish.
